The fish pepper — a cream-and-green-striped heirloom Capsicum annuum — traveled from Haiti through African American farming communities to Baltimore's legendary crab houses and oyster bars, where Black chefs used it as their secret weapon for over a century. Then it nearly disappeared. Florida Fish Pepper Co. is bringing it back, building a grower network across the Southeast, and creating the supply chain, the markets, and the cultural recognition this pepper deserves.
